    One Year of Healthy, Hearty and Simple One-Dish Meals

    List of Ingredients





    4 cups carrots -- grated
    1 1/3 cups crushed pineapple
    2 teaspoons lemon juice
    2/3 cup low-fat yogurt
    3 tablespoons light mayonnaise
    2 tablespoons coconut -- shredded
    2 teaspoons sugar

    In bowl, combine carrots, pineapple, raisisn and lemon juice; toss. In a small bowl, combine remaining ingredients; use a hand mixer to beat until blended well. Pour over carrot mixture and toss. Let chill 1 hour before serving. Serves 4.
