My Favorite Potato Salad

6 medium red potatoes
salt and pepper -- to taste
2 tablespoons green onion -- chopped
3 hard-boiled eggs -- chopped
1/4 cup chopped celery
1 1/4 cups mayonnaise -- approximate
Recipe
Cook potatoes in boiling water until just tender. Cool slightly; peel. While
still warm, dice potatoes and sprinkle with salt and pepper.
Add remaining ingredients; toss gently to mix. Cover and chill several hours or
overnight. Serves 8.

NOTES : I like to substitute about 1/2 cup sour cream for part of the
mayonnaise. I just reduce the amount of mayonnaise for the amout of sour cream
used.
