Recipe Introduction
A bit tedious to prepare but worth the wait. This recipe makes a mildly spiced roast beef sandwich spread.
List of Ingredients
2 pounds lean beef
2 tablespoons water
1/8 teaspoon allspice
1/8 teaspoon ground cloves
1 Dash nutmeg
2 teaspoons butter -- softened
Salt and pepper -- to taste
Clarified butter
Recipe
Trim meat of fat the chop or dice the meat. Place in a heavy, lidded, small casserole; add the water and spices. Cover the casserole and place it in a larger pot or roasting pan at least 3 inches deep. Place the casserole in the roasting pan in the middle of the oven. Pour boiling water into the roasting pan up to the level of the meat. Bake at 325 degrees F for 3 hours and 15 minutes. During baking add more boiling water to the roasting pan and check to see if the beef needs water. Add just enough water to prevent sticking.
Remove and cool the meat. Turn it into a paste by using a food processor. You can also rub it through a sieve or run it through a meat grinder. Add a little of the cooking liquid (or red wine or barbecue sauce) and the softened butter to make a good consistency. If using a food processor you can do this while processing the meat. Season to taste with salt and pepper. Press the spread into small jars then pour a 1/4-inch of clarified butter over each jar of meat. Spread. Cover jars and refrigerate.
