List of Ingredients
1 pound extra lean ground beef
8 ounces fresh mushrooms -- coarsely chopped
1 1/4 pounds cabbage -- finely shredded
2 medium carrots -- finely grated
1/4 cup hoisin sauce
2 teaspoons dark sesame oil -- Asian type
6 lettuce leaves
Recipe
Rinse and pat dry mushrooms. Coarsely chop mushrooms removing any tough stems. Shred cabbage. Grate carrots using the large holes of a box grater.
Heat the peanut oil in a large skillet over medium heat for 1 minute. Add the beef and cook until browned, stirring meat to break up, as it cooks in the skillet. Drain off excess fat.
Add the mushrooms and cook stirring occasionally, until they just begin to release their liquid, about 5 minutes.
Meanwhile mix hoisin sauce, sesame oil and 1/4 cup water in a 1-cup measure. Add the hoisin mixture ,the cabbage, and the carrots to the skillet. Stir well to coat, cover, and cook about 3 minutes or until tender.
While the cabbage steams, stack the tortillas on a microwave safe plate and heat until just warmed, following the package directions.
If desired, spread a little of the hoisin sauce onto each tortilla. Spoon the cabbage mixture onto each tortilla and tuck one end in before rolling up. Serves 6.
