    2 large baking potatoes -- up to 3 total
    1/4 cup butter
    1/4 cup chopped onion
    14 1/2 ounces chicken broth
    12 ounces evaporated milk
    salt and pepper -- to taste
    1/2 cup Cheddar cheese -- grated
    3 tablespoons sliced green onions
    4 slices bacon -- cooked and crumbled

    Bake potatoes and let cool enough to handle.

    Melt butter in large saucepan over medium heat. Add onion, cook
    stirring occasionally for 1 to 2 minutes. until tender. Stir in
    flour.
    Gradually stir in chicken broth and evaporated milk. Scoop pulp from
    one baked potato and mash. Add pulp to broth mixture. Dice remaining
    potato(s) add to soup. Heat through. Season to taste with salt and
    pepper.

    Top each bowl of soup with Cheddar cheese, sliced green onion and
    crumbled bacon. Serves 4.
