    Beef Tea


    1 pound round steak -- or neck bone meat, use lean meat
    1 cup cold water
    1/2 teaspoon salt

    Recipe



    Grind the round steak twice and place in a quart Mason jar. Add 1 cup cold water and 1/2 teaspoon salt.

    Cover the lightly. Place it on a cloth in a pan containing as much water as possible without upsetting the jar. Bring the water slowly to a gentle boil and continue boiling for 1 hour. Remove the jar. Place on a cake rack to cool as quickly as possible. Strain the juice. Store, covered, in the refrigerator until ready to use.

    Note: I love to make this when I'm not feeling well. It makes a soothing broth and a wonderful beef noodle soup. I add some cooked noodles to the beef tea when I want a light lunch.
