Cream of Vegetable Soup

List of Ingredients
1 teaspoon onion -- finely chopped
2 tablespoons margarine
2 tablespoons flour -- up to 3 tablespoons total
1 teaspoon salt
1/8 teaspoon pepper
1 cup cooked asparagus -- or can choose broccoli, peas or other vegetables instead, puree vegetables
4 cups milk
Saute onion in margarine. Blend in flour, salt and pepper. Cook over medium heat until bubbly. Add pureed vegetable and bring to a boil, boil 1 minute, stirring occasionally. Add milk and heat to serving temperature. Can also use part consomme and part milk instead. Serves 4.
