4 cups low sodium chicken broth
1 small onion, finely chopped
2 stalks celery
1 cup sliced mushrooms, optional
1/2 cup uncooked rice
2 cups diced cooked chicken
Recipe
In a large saucepan, on medium heat, add broth and all the vegetables. Bring to a boil and add rice. Simmer for 20 minutes until rice is tender.Add cooked chicken and continue to simmer for about 5 minutes.
Serves 4.
