    Swedish Spinach Soup

    Recipe Introduction

    Spinach, leeks and cream make up this homey soup.

    List of Ingredients

    1/2 pound spinach
    1 tablespoon leek -- chopped, or chopped onion
    1 tablespoon butter
    4 cups water
    4 chicken bouillon cubes
    2 eggs
    2 tablespoons cream
    Salt and pepper




    Recipe

    Melt the butter and saute the leek or onion until tender and golden. Add water, and when it is boiling, add bouillon cubes. Cut the spinach into large pieces cutting the tender leaves away from the ribs. Add the spinach to the soup. Cook until the leaves are tender but are still a nice green. Beat the egg yolks slightly. Add cream. Pour some of the hot soup into the eggs, stirring constantly. Add this mixture to the rest of the soup. Return to the stove and cook gently over a slow fire, stirring vigorously until the soup begins to thicken like custard.
