1 1/2 cups shredded cheddar or American cheese
3/4 cups milk
1 tsp. dry mustard
1 tsp Worcestershire sauce
1 Dash cayenne
1 beaten egg
4 slices bread -- toasted or poached eggs
Cheese sauce: in a heavy saucepan combine the cheese, milk, mustard,
Worcestershire sauce, and cayenne. Cook over low heat, stirring
constantly, till cheese melts. Slowly pour 1/2 of the cheese mixture
over the beaten egg, return all to remaining mixture in the pan. Cook
and stir over low heat till mixture thickens and just bubbles.
Serve at once over the toasted bread or poached eggs. Makes 4 servings.
