    7 medium potatoes -- sliced, about 7 cups
    2 cups heavy cream
    Salt and pepper
    1/4 cup Parmesan cheese -- freshly grated

    Peel and slice potatoes less than 1/2 inch thick. Place half the potatoes in a 9 x 13 inch baking dish sprayed with nonstick cooking spray. Pour half of the cream over the top. Sprinkle with salt and pepper and half of the Parmesan cheese. Layer with remaining potatoes an repeat with remaining cream, salt, pepper and Parmesan cheese. Bake at 450 degrees F (or 425 if using a glass baking pan) for about 45 minutes or until golden brown. The potatoes should be tender.

    Serves 6.

    Tip: Watch closely the last 15 minutes. If top is getting too brown, cover with foil. Cooking time could be longer if using a smaller, but deeper, baking dish.
