List of Ingredients
3 19-ounce cans black beans
1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon minced jalapeno
1/4 cup sliced scallions
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon ground cumin
Garnish: sliced scallions, chopped tomatoesRecipe
Put 2 cups beans, oil and lemon juice in blender, puree until smooth. Scrape into large bowl, stir in remaining beans, jalapeno, scallions, garlic, salt and cumin. Refrigeratwe for 2 hours. Garnish with scallions and tomatoes. Serve with tortilla chips.
