Chicken Strata

1 chicken (2 1/2 to 3 pounds)
1 carrot, peeled, sliced
1 onion, sliced
2 teaspoons salt
2 quarts water
2 cups chicken broth
1/2 cup butter or margarine
1/2 cup flour
1 teaspoon salt
1/2 cup milk
2 eggs, slightly beaten
3 cups herbed stuffing mix
1 cup dry breadcrumbs
1/4 cup butter, melted
Recipe
In saucepan, combine chicken, carrot, onion, 2 teaspoons salt and water. Cover and cook on high 5 minutes. Reduce heat, simmer 1 1/2 to 2 hours. Remove from heat. Strain broth and refrigerate until fat can be skimmed. Cool chicken. Remove meat from bones. Melt 1/2 cup butter or margarine in medium saucepan. Stir in flour and 1 teaspoon salt. Cook 1 minute, stirring. Gradually add 2 cups reserved broth and milk. Cook on medium 3 to 5 minutes. Remove from heat. Gradually add half of mixture to beaten eggs in small bowl. Blend egg mixture back into pan into remaining mixture. Cook 3 to 4 minutes. Preheat oven to 375 F. Butter 2 1/2 quart casserole. Put herbed stuffing mix into casserole. pour half of sauce over stuffing. Add deboned chicken. Add remaining sauce. In small bowl, mix breadcrumbs with 1/4 cup butter and sprinkle over top. Bake 20 minutes.
