    Country Fried Corn with Bacon

    List of Ingredients




    4 slices smoked country style bacon
    1/2 small onion, finely chopped
    6 to 8 ears of corn, kernels cut to make 4 cups
    salt and freshly ground pepper

    Recipe



    Fry bacon until crisp, drain. Pour off all but 2 tablespoons bacon fat, reserving the rest for another recipe. Crumble bacon. Reserve. Add onion to the skillet and fry until soft. Husk corn, cut kernels from ears and scrape the cobs to get all of the milk. Add corn and milk mixture to the onions and cook 2 to 3 minutes. Add bacon, season with salt and pepper.
    Serves 4.
