10 oz. chicken tenders
Flour seasoned with salt and pepper, as needed
1/2 c. olive oil
1 c. julienned onion
1 c. julienned smoked ham
1/2 t. minced fresh garlic
1 c. heavy cream
4 T. grated romano cheese, plus more for garnish
1/2 c. frozen sweet peas
6 oz. linguine, cooked very al dente (firm),
drained
Salt and freshly ground black pepper, to taste
Freshly chopped Italian parsley, for garnish
Recipe
Lightly dredge the chicken tenders in flour. Heat
the olive oil in a large
skillet and saute the chicken until browned on
both sides. Add the onion; saute until
caramelized (3-4 min). Add the ham and garlic.
Saute until the garlic is browned.
Add the cream to deglaze the pan (stir up any
browned bits from the bottom).
Add the cheese, peas and cooked linguine. Toss;
let simmer until the liquid has reduced and the
sauce is thick. Season to taste with salt and
pepper. Serve immediately. Garnish with freshly
grated black pepper, grated romano cheese and
parsley. Makes 1-2 servings.
