8 large potatoes, peeled and quartered
1/2 cup milk
1 tsp salt
4 tbls butter or margarine, melted, divided
2 eggs, beaten
2 cups sour cream
2 cups small curd cottage cheese
10 green onions, finely chopped
1 cup crushed butter-flavored crackers
Recipe
Cook potatoes until tender; drain. Place in a large bowl. Add milk,
salt and 2 tbls butter; beat until light and fluffy. Fold in egg, sour
cream, cottage cheese and onions. Place in a greased 3-quart baking
dish. Combine the cracker crumbs and the remaining butter; sprinkle
over potato mixture. Bake, uncovered at 350° for 40-60 minutes or
until crumbs are lightly browned. YIELD: 4-6 servings.
