    1 tsp. olive oil
    3 garlic cloves, crushed
    3 8 oz. can low-sodium tomato sauce
    1 Tblsp. Italian herb seasoning
    1/4 tsp. freshly ground pepper
    1 1/2 c. park-skim ricotta cheese
    1 1/4 c. shredded part-skim mozzarella cheese
    3/4 c. grated Parmesan cheese
    1 egg, lightly beaten
    1/4 c. chopped flat-leaf parsley
    12 manicotti shells, COOKED

    Recipe



    1. In large nonstick skillet, heat the oil. Saute the garlic until golden, about 2 min. Stir in the tomato sauce, Italian seasoning and pepper; bring to a boil. Reduce the heat and simmer, covered, stirring occasionally, about 15 min.

    2. Meanwhile, preheat the oven to 350F, spray a 9x13" baking dish with nonstick cooking spray.

    3. In a medium bowl, combine the ricotta, mozzarella, Parmesan, egg and parsley. Fill the COOKED manicotti shells with the cheese mixture; place in the baking dish. pour the sauce over the shells. Bake until browned and bubbling. 30-40 min. Serves 6
