2 T. Shortening
1 1/4 c. Sugar
2 eggs
1 c. Canned pumpkin
1 tsp. Vanilla
3 ½ c. Flour
3 tsp. Baking powder
½ tsp. Salt
½ tsp. Cinnamon
½ tsp. Nutmeg
Recipe
Blend shortening and sugar. Beat in eggs, one at a time. Stir in pumpkin and vanilla. Add dry ingredients. Chill dough. Roll out on floured surface to ½" thick. Cut with floured doughnut cutter. Fry in deep, hot fat, 375, until golden, about 3 minutes. Drain on towel. Dust with sugar or frost. Yield: 2 dozen
