    Recipe Introduction

    This soup is very rich, You can only eat a small bowl of it. It reminds me of wisconsin cheese soup. If you like more stuff in your soup you could add more vegetables, If you don't want it too rich you can cut out 1/2 of the cheese and add two cups of milk in addition to the cream. We really liked this one.

    List of Ingredients


    1/2 stick butter, melted
    1/2 medium onion, chopped
    2 stalks celery, chopped
    1 1/2 tablespoon flour
    1 quart chicken stock
    1 1/2 lb fresh broccoli, chopped
    2 carrots, chopped
    2 lbs processed velveeta cheese (this is the soft cheese in the box)
    1 pint half and half
    1/2 tablespoon pepper

    Recipe

    Place the melted butter, chopped onion, chopped celery,
    broccoli and the carrots in the slow cooker. Pour the chicken
    stock over top of the vegetables. Cover and cook on low for 6
    to 8 hours or on high for 4 to 6 hours. Half an hour before
    serving add half & half and processed cheese. Sprinkle
    each serving with pepper before serving. Makes 6 to 8 servings.
