    List of Ingredients




    Enchilada sauce:
    3 T. oil
    2 T. flour
    1/4 c. red chili powder
    2 c. beef broth or 2 c. water and 3 bullion cubes
    2 cans tomato sauce( the larger one 15oz?)
    1/2 t. oregano
    1/4 t. cumin
    1-3 cloves garlic minced. I like lots so I used 3

    Heat oil in saucepan. Stir in flour,cook slightly. Stir in chili powder, broth, tomato sauce,
    oregano, cumin, and garlic. Simmer 20 min. Makes 4 c. Enchilada sauce.

    Enchiladas:
    2-3 c chicken or beef
    1 batch of enchilada sauce above
    1 lb of mozzarella cheese
    corn tortillas

    Recipe




    put a small amount of enchilada sauce in the bottom of crockpot. Layer in this order: corn tortillas, meat, sauce, cheese. Repeat. cover and cook on low for 5-7 hours.
