    CORNMEAL PIZZA DOUGH

    Ingredients
    1 tablespoon yeast
    1 tablespoon sugar
    1 cup warm water (about 100 degrees)
    ¾ cup semolina
    1½ cups flour
    ¾ cup polenta or finely ground corn meal
    1 teaspoon fine sea salt
    3 tablespoons olive oil
    Directions

    In a large bowl or in an electric mixer, dissolve the yeast and sugar in the warm water. Add the semolina, flour, polenta, salt and olive oil. Combine well. Knead the dough until it is shiny and smooth, adding flour as needed. Place the dough in a lightly oiled bowl, cover and let rise until it is doubled in bulk, about 2 hours.

    Makes about 1 pound of dough
