Mini Orange-Date Muffins
3 dozen mini muffins
1 package (22 ounces) date quick bread and muffin mix
1 cup plus 1 tablespoon orange juice, divided
1/2 cup (1 stick) butter, melted
1 egg, beaten
1 tablespoon grated orange peel
36 pecan halves
1/2 cup confectioners? sugar
1. Preheat the oven to 400°F. Coat mini muffin pans with nonstick cooking spray.
2. In a large bowl, stir together the date bread mix, 1 cup orange juice, the butter, egg, and orange peel until well blended. Spoon the batter into the muffin pans, filling each tin two-thirds full. Place one pecan half on each muffin and bake for 10 to 12 minutes, or until golden. Remove from the pan to cool on a wire rack.
3. Meanwhile, in a small bowl, combine the confectioners' sugar and remaining tablespoon orange juice; mix well. Drizzle over the cooled muffins. Serve, or loosely cover until ready to serve.
OPTION: These can make 1 dozen regular-sized muffins, if you prefer. Just use a different-sized muffin pan and increase the cooking time to 20 to 25 minutes.
