    Southern Corn bread

    2 cups sifted corn meal
    1 tsp. baking powder
    1 tsp. salt
    1½ cups buttermilk ( you can use reg .milk)
    1 egg
    1 TBSP. fat, or oil.(I WILL USE MORE)
    ½ tsp. baking soda

    Sift corn meal,baking powder,and salt together in mixing bowl.Mix baking soda with buttermilk, and add to dry ingredients.Add egg and beat well. Your batter should be med-thick. Grease skillet* with fat and pour in the batter. Bake@ 425º for 20-25 mins. or till golden brown.

    * I use a # 5 cast iron skillet,
    you can use muffin cups ,or just a good bakinr pan.
