Blueberry Bran Muffins Ingredients
2 2/3 cup all-bran cereal
1 1/2 cup skim milk
4 each egg whites
1 tbsp vanilla
2 cup flour
2/3 cup brown sugar or less
2 tbsp baking powder
3/4 tsp baking soda
1 1/2 tsp cinnamon
2 cup blueberries,fresh or frozen

Food Tip
Leftovers should never be at room temperature for more than 2 hours. They should be refrigerated quickly. Refrigerators are designed to accommodate changes in temperatures. Alhough plastic wrap may prevent contact with other food and bacteria, it will not prevent growth of bacteria already in or on the food if left out at room temperature.

Preheat oven to 325 degrees. Combine bran cereal, milk, egg whites and
vanilla-let stand 5 minutes. Stir together flour, brown sugar, baking
powder, baking soda and cinnamon in a large bowl. Add cereal-milk
mixture and mix. Add blueberries and stir carefully. Spoon into
lightly oiled or paper lined muffin tins. Bake for 30 minutes. Makes
16 muffins.
