    ***BLACKBERRY PIE

    Makes 1 pie



    Ingredients:

    1 recipe double pie crust
    4 cups fresh blackberries
    3 tablespoons all-purpose flour
    1 cup white sugar
    1 tablespoon lemon juice
    1 tablespoon butter or margarine

    Directions:
    1 Preheat oven to 450 degrees F (230 degrees C).
    2 Line a 9 inch pie pan with half the pastry. Save remaining pastry for top crust. Chill both while preparing the blackberries.

    3 Combine berries, flour, sugar, and lemon juice. Spoon into pie shell, and dot with butter or margarine. Cover with top crust, and slash in several places.

    4 Bake for 15 minutes. Reduce heat to 350 degrees F (175 degrees C). Continue baking for 35 to 40 minutes, or until browned.
    Here is what one lady does and I have before and it works...1 Cup sugar with 3-4 Tbsp of corn starch (mix them together). In a pan she places enough berries for a pie, adds the sugar mixture, with oleo and then cooks it on medium until it's thickened. Let cool a bit then pour into unbaked pie shell. Top with 2nd crust....doing your normal crimping & vent slices on top. Bake at 350 for approx 40 minutes. My pies have been coming out great ever since.
