    Coconut Cream Pie

    1 pie shell, baked

    1/2 C sugar
    1/4 C cornstarch
    2 C half and half
    4 egg yolks
    3 T butter
    1 C sweetened flaked coconut
    1 tsp vanilla

    Combine sugar and cornstarch in heavy saucepan. Whisk together half and half and egg yolks. Gradually whisk egg mixture into sugar mixture; bring to boil over medium heat, whisking constantly. Boil 1 minute; remove from heat.

    Stir in butter, coconut and vanilla. Cover with plastic wrap, pressing it onto filling; let stand 30 minutes. Spoon mixture into prepared crust; cover and chill 30 minutes until set.

    Top with sweetened whipping cream.
