No Bake Peach (or Strawberry) Pie
1 10" or 2 8" baked pie shells
1 1/2 C Water
2 lg Peaches (or about 1 C diced strawberries)
4-6 drops Yellow (or red) food coloring
1 pkg Knox Geletin
1/4 C Cold Water
1/8 tsp Salt
1 C Sugar
1 1/2 Tbsp Corn Starch
Lots of fresh RIPE peaches
Dissolve geletin in 1/4 C water...set aside. Cook peaches in 1 1/2 C Water until soft. In the meantime mix in small bowl the sugar & starch. Once the peaches are sofened, add the sugar mixture & geletin. Cook until thick. Add salt. Cool. Now add sliced fresh peaches to mixture. Gentle fold in mixture (I like to do it with my hands). Pour or spoon into cooled baked shells. Refrigerate at least 4 hours. Top with cool whip or whipped cream. (A must!) Serve cold.
