***Oatmeal Cake

Oatmeal Cake
1 C old-fashioned oatmeal
1.5 C boiling water
1 C brown sugar
1/2 C shortening
1 tsp cinnamon
1 C white sugar
2 eggs
1 tsp baking soda
1/2 tsp salt
1.5 C flour

Pour boiling water over oatmeal. Set aside to cool. Preheat oven to 350; prepare a 9 x 13 cake pan. Combine both sugars, eggs, soda, salt and flour. Mix well; stir in soaked oatmeal and any water not absorbed. Pour into pan and bake 40 minutes. While cake bakes, prepare icing and pour over hot cake. Then place under broiler for about 3 minutes.

Icing: Melt 9 T butter and 1 C brown sugar over low heat. Add 1 7-oz can flaked coconut, 1 tsp vanilla, 1/2 C evaporated milk and 1/2 C chopped pecans.
Heat all ingredients together in a small saucepan until BOILING and blended.
