    QUEEN MOTHER'S FAVOURITE CAKE

    Angel

    Pour one cup of boiling water over one cup of chopped dates and one teaspoon (5ml) of bicarbonate of soda in a large mixing bowl.
    Let it stand while the following is mixed:

    1 cup (250ml) sugar
    1 egg beaten
    1½ (375ml) cups cake flour, sifted
    ½ cup (125ml) walnuts or pecan nuts, chopped
    ¼ cup (60ml) butter
    1 teaspoon (5ml) vanilla essence
    ½ teaspoon (2,5ml) baking powder
    ½ teaspoon (2,5ml) salt

    Add all the ingredients to the date mixture, mix through and bake in a greased medium-size loaf pan for 40-45 minutes.

    Topping:
    75ml brown sugar
    30ml butter
    30ml cream

    Mix ingredients together and boil for three minutes. Spread on cooled cake and sprinkle with chopped nuts.
