Vanilla Cream Pie
Base:
1 C sugar
4.5 T cornstarch
1/2 tsp salt
3 C milk
3 eggs, separated
2 T margarine
2 tsp vanilla
Combine dry ingredients and mix well. Stir in milk. Over medium heat, let come to a slow boil for 1 minute. Remove from heat and pour 1/2 of mixture over beaten egg yolks, constantly stirring. Then pour back into pan with other mixture. Return to heat and boil 1 minute. Add margarine and vanilla. Pour into pie shell.
For Banana Cream: Let mixture cool. Add sliced bananas. Pour into shell.
For Coconut: Add coconut when you add margarine & vanilla.
For Chocolate: Add 4 T dry cocoa to sugar & cornstarch.
For Caramel: Brown sugar in heavy pan; add heated milk with dissolved cornstarch.
For Raisin: Add 1/2 to 3/4 C the last minute of cooking.
