    ZUCCHINI BREAD -
    4 eggs
    4 teaspoons Cinnamon
    2 teaspoons Baking Soda
    4 cups shredded zucchini
    6 1/2 cups flour
    1 teaspoon baking powder
    4 cups sugar (I use 3)
    1 cup oil
    2 teaspoons salt
    4 Tsps. vanilla
    2 teaspoons nutmeg
    Stir together flour, cinnamon, baking soda, salt, nutmeg and baking
    powder. Set aside. Beat together sugar, zucchini and eggs; add oil and
    lemon peel. Mix well. Stir flour into zucchini mixture. Add 2 cups
    chopped nuts if desired. Turn batter into 4 greased 8"x4"x2" loaf pans.
    Bake at 350° for 55 to 60 minutes. This recipe uses up the zucchini and
    makes 4 loaves at once! Yummy
