Double Chocolate Zucchini Cake
Grate 2 cups peeled zucchini and set aside to drain off water
( discard water ) Note: Do not preheat oven!!!!!!
1/2 cup soft butter or margerine
1 3/4 cup sugar
1/2 cup crisco oil
2 large eggs
1/2 cup sour cream
1 tsp. vanilla
2 1/2 cup flour
1/4 cup cocoa
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/2 tsp gr cloves
1/2 tsp baking powder
1 6 oz package chocolate chips ( miniatures preferred )
Cream together the butter and sugar,oil,eggs,sour cream and vanilla.
Then stir remaining ingredients except zucchini and chocolate chips.
Fold in zucchini. Pour into greased 13 x 9 x 2 cake pan. Sprinkle
with chocolate chips. Bake 325 degrees for 40 to 45 min. Do not
preheat oen. When cool sprinkle with powdered sugar if desired.

Zucchini Cake With Cream Cheese Icing
3 cups sugar
4 eggs
1 1/4 cups oil
3 cups flour
1 tsp baking soda
2 cup zucchini shredded
1/2 tsp cinnamon
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1 cup chopped walnuts
1 cup raisins ( if desired )
Beat together sugar,eggs and oil. Add sifted dry ingredients
alternately with zucchini. Add vanilla and nuts or substitute
raisins. Pour into 3 8 or 9 in square pans. Bake 350 degrees
about 45 min. Frost when cool.
Frosting
1 8 oz cream cheese ,room temperature
1/2 cup margerine or butter softened
2 tsp vanilla
1 box (4 cups ) powdered sugar
Mix all together and frost cakes. Refigerate after frosting.
May also be wrapped and frozen.
