For those who like to make candy rolls
for "C" season, thought you'd like these:
_ Creamy Pralines
_ 2 1/2___ cups_ sugar
_ 3/4______ cup_ evaporated milk
_ 2 tablespoons_ butter
_ 2 tablespoons_ light corn syrup
_ 2_______ cups_ pecan halves
Combine sugar, milk, butter, and corn syrup in a
heavy Dutch oven, mixing well; bring to a boil.
Stir in pecans; cook, stirring occasionally, until
mixture reaches soft-ball stage (234 degrees F.)
Remove from heat; beat 2 to 3 minutes or until mixture
is creamy and begins to thicken. Working rapidly, drop
mixture by rounded tablespoonfuls onto lightly buttered
waxed paper; let cool.
Yield:_ about 1 1/2 dozen (1 per serving).

Pecan Roll (Like Stuckey's Pecan Logs)
1 cup cream
2 cups sugar
1/2 cup white corn syrup
1-1/2 cups pecans
1 cup light brown sugar
Boil cream, sugar, syrup, to soft-ball stage.(234-238 F).
Cool to room temperature, then beat till creamy.
Turn out onto board dusted with powdered sugar, knead
until firm. Shape into a roll and cover the outside with
pecans.
Put in cool place to harden. Slice when firm with a sharp
knife.
Note# pecans can also be worked into the candy roll
while kneading.
Date Logs
Ingredients
1/2 cup margarine
8 oz. chopped dates
1 cup sugar
1 egg
2 tsp. vanilla extract
2 cups Rice Krispie Cereal
2 cups chopped pecans
1 cup flaked coconut
Preparation
Combine margarine, dates, sugar, & eggs in a large
saucepan. Cook over low heat for 10 minutes, stirring
constantly.
Add vanilla & remove from heat. Stir in cereal & pecans.
Mix well (will be stiff). Let cool enough to roll into
3 long logs. Roll in coconut & keep rolling to get as
much coconut on the log as you can.
Chill well & slice real thin.
