White Chocolate Chex Mix - Absolutely delicious
This is a wonderful and easy recipe that can be put in cans or plates and given as Christmas gifts or as a gift for any occasion. Much easier than cookies and very delicious.

Rice Chex - 6 cups
Cheerios - 3 cups
Thin Pretzel Sticks - 2 cups
Cocktail Peanuts - salted - 2 cups
M&M's - 12 ounce bag (Use Red and Green for Christmas Mix)

White Chocolate - 20 ozs. I use the white Merkens (round discs) used for candy making from candy stores

In large pan dump all ingredients EXCEPT the White Chocolate.

Melt the white chocolate - either in a double boiler or in the microwave. If you use the microwave, be careful as it can easily burn. You may also take a large electric skillet - fill 1/2 full with water and set a bowl in the water - this acts as a double boiler.
Stir constantly until melted. When melted, pour over dry mixture and continually mix being careful not to break everything up. Mix until well coated.

Turn out onto wax paper and let cool - at least 1 hour. Break up and store in airtight container. Do not let the mixture set for too long in the pan after you pour the chocolate on it as it will stick to the pan.
