White Chocolate Fudge

I just love white chocolate and this fudge recipe is a nice change from the usual chocolate fudge. It's so quick and easy you will want to make it all the time. I often double the recipe and make enough for a large family gathering.
8 oz pkg cream cheese, softened
4 cups confectioners sugar
1 1/2 tsp vanilla extract
12 oz white chocolate
3/4 cup chopped pecans
Melt the chocolate in a double boiler. Meanwhile, in a mixing bowl, beat cream cheese, sugar, and vanilla until smooth. Fold together the cream cheese mixture and the melted chocolate. Stir in pecans. Spread into a greased 8 inch baking pan. Chill until ready to serve. Cut into squares and enjoy!
*Hint: Line your baking pan with foil leaving the edges of the foil hanging over the pan. Then spray the foil with a cooking spray such as Pam. This makes it easy to grab the foil and remove the fudge from the pan to be cut.
