    Baked Breaded Tomatoes - Mayo Clinic Recipe

    This is a recipe from a cookbook given to me aftrer I had my heart attack.... someone who worked at Hospice when I volunteered there gave this to me....
    Used this recipe several times...
    The name of the cookbook is, "The Mayo Clinic Williams-Sonoma Cookbook".

    Baked Breaded Tomatoes

    5 slices whole wheat (whole meal) sandwish bread made into crumbs
    2 tablespoons grated Parmesan Cheese
    1 tablespoon olive oil
    2 tablespoons chopped fresh flat leaf (Italian) parsley
    1 tablespoon chopped fresh oregano or 1 ½ teaspoon dried oregano
    12 Roma (Plum) tomatoes quartered lengthwise
    4 green (spring) onions thinly sliced including green portions
    ½ teaspoon ground pepper
    1 teaspoon sugar

    Preheat oven to 375 degrees. Coat a glass or ceramic 8 inch (20 cm) baking dish with nonstick cooking spray.
    In a bowl, combine the crumbs, cheese, olive oil, parsley and oregano. Stir and toss vigorously to coat the crumbs evenly.
    In a large nonstick frying pan over medium high heat, combine the tomatoes, onions, peppers and sugar. Saute until the tomatoes soften slightly and exude some juice 8-10 minutes.
    Spread half the tomato mixture over the bottom of the prepared baking dish, then sprinkle with half the crumb mixture. Spoon the remaining tomato mixture over the crumbs, then sprinkle the remaining crumbs evenly over the top.
    Bake until the crumb topping is crisp and browned about 20 minutes.
    Cool 5 minutes before serving.
    Serves 6

    Per serving….120 calories, 4 g protein, 18 g carbohydrates, 4 g fat, less than 1 g saturated fat, 1 mg cholesterol, 169 mg sodium, 4 grams fiber
