Holiday Rice (for a crowd)
2 to 3 boxes of Uncle Ben’s Longrain & Wild Rice (Original)
1 pound of Italian Sausage
1 Chicken Breast or Turkey/Chicken innards
3 cans of Chicken Broth
1 medium Onion
8 oz. of Sliced Mushrooms (chop in smaller pieces)
½ to ¾ cup Chopped Pecans (optional)
Minced Garlic
Salt
Pepper
Parsley
Celery Seed
Boil the Chicken part(s) of your choice in the 3 cans of chicken broth with the aforementioned seasonings, to your own taste. When the chicken is done, remove it from the broth. Save the broth.
Brown the Italian Sausage, making sure it browns in smaller and loose sections. When the sausage is browned, add to it the chopped onions and mushrooms. Wait a couple of minutes, then add the pecans. Cook this mixture until the onions start to become transparent.
Prepare the rice according to the instructions on the box. Substitute the reserved broth for the water in the instructions. The box has special instructions for multi-box preparation.
When the rice is done, transfer it to a large baking dish. Stir in the Sausage mixture. Dice the chicken cooked earlier and add it to the dish. Mix together well.
Bake in a pre-heated 350-degree oven for approximately 30 minutes to allow flavors to mingle.
Note: Check the serving sizes on the rice boxes for the number you wish to serve. This recipe with 3 boxes makes a lot, but it goes fast!
