Mexican Lasagna

Tortillas
Taco sauce
Ground beef
Taco mix
Refried beans
Salsa
Shredded cheese (cheddar or Mexican mix)
Sour cream
1. Brown ground beef and add taco mix (follow package directions.)
2. Heat refried beans with added salsa.
3. Spray bottom of glass (rectangular) baking dish with PAM.
Layer tortillas on bottom of dish--will have to cut to cover the whole
thing.
4. Brush tortillas with taco sauce.
5. Spread half of beef/taco mixture on tortillas.
Cover with shredded cheese.
6. Add another layer of tortillas and taco sauce.
This time, spread tortillas with bean/salsa mixture.
Cover with shredded cheese.
7. Add third layer of torillas and repeat taco sauce, meat and cheese.
8. Bake in a 350 degree F. oven 25-30 mins.
9. Serve with sour cream and salsa.
I got this idea from my sister and have played with it a bit.
The refried beans/salsa layer was my touch! I've adapted it to low fat by using fat-free tortillas, fat-free beans, 2% cheese (the fat-free doesn't melt well) and fat-free sour cream.
The nice thing about this--you can tweak the "heat" to your liking.
Using hot salsa, taco sauce and pepper jack cheese really spices it up.
Add some chilies, if you're really macho!
