Risotto with Peas & Mushrooms
Ingredients:
* 2 Tbsp. (30mL) Mrs.Dash® Chicken Grilling Blend?
* 2 (14 Oz.) (392mL) cans reduced sodium chicken broth
* 6 Oz./1 cup (168g) arborio rice
* 1 cup (240mL) frozen peas
* 8 Oz. (225g) can sliced mushrooms, drained
* 1 Tbsp. (15mL) olive oil
* 2 Tbsp. (30mL) Parmesan cheese
Directions:
1. Combine chicken broth and Mrs. Dash® Chicken Grilling Blend? in medium saucepan.Bring to a boil.
2. Gradually stir in rice; reduce heat and simmer, covered, 22 to 25 minutes or until all liquid is absorbed.Stir in remaining ingredients and heat through.
3. Serve immediately sprinkled with freshly grated Parmesan cheese and additional Mrs. Dash® Chicken Grilling Blend?, if desired.
4. Hint: - To prepare using long grain converted rice, cook 1 1/2 cups uncooked rice in 3 1/3 cups low sodium chicken broth with 1 Tbsp. Mrs. Dash® Chicken Grilling Blend according to package directions. Stir in peas, mushrooms, butter and Parmesan cheese.
