Summer Squash Casserole
My neighbor showed up yesterday with a sackful of squash from his garden, so I got out my recipe. I make this at least once or twice each month through the summer when the squash gets abundant.
4 C yellow squash, sliced
1/2 C onion, chopped
1/2 C fine cracker crumbs
1/4 C butter
1/3 C shredded cheddar cheese
1 egg, beaten
1/4 C milk or cream
1/4 tsp pepper
Cook squash and onion in small amount of salted water until tender; drain. Stir in cracker crumbs, reserving 1 tbsp for top. Add cheese, egg and cream, pepper and butter. Spoon in a greased casserole. Add reserved cracker crumbs to top. Bake at 350 degrees for 30 minutes or until golden brown.
I used saltines in the recipe and Ritz cracker cumbs for the top. That way I don't have to add butter to the topping.
