Belle's Scottish Shortbread
This recipe came right from Scotland and it is so easy; just four
ingredients. This recipe makes a delicious, rich, flaky shortbread. It
stores well because there are no eggs used. They can keep for several weeks
in an airtight container (although they're usually gone in less than a
week). They are perfect for snacks, lunchboxes, after-school treat or TV
watching with a cold glass of milk.
Ingredients:
2 sticks of real butter, not margarine
1/2 c. white sugar
2 c. all-purpose flour
1/2 c. cornstarch
Directions:
Cream butter and sugar together. Add flour and cornstarch and knead well
with clean hands. Press into a baking pan, making sure the dough is about
1/2-inch thick. Do not grease the pan. Prick with a fork. Bake in a
preheated 300-degree oven. Bake for approximately 1 hour or until golden
brown. Makes 3 to 4 dozen cookies after being cut into squares.
