CHOC CHIP COOKIES With A TWIST

1/2 c. shortening
1/2 c. butter
1 c. brown sugar
1 c. granulated sugar
2 eggs
2 tsp. vanilla extract
1 tsp. maple extract
1 1/2 c. uncooked regular oatmeal
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
12 ounces semi-sweet chocolate chunks
6 ounces white chocolate chips
1 c. toasted, chopped pecans or walnuts
Directions:
Preheat oven to 350 degrees. Beat shortening and butter at medium speed
until creamy. Add sugars and beat well. Beat in eggs until well blended. Add
flavorings. In food processor, combine oatmeal with 1/2 of the semi-sweet
chocolate chunks and pulse until combined and partially ground, set aside.
Combine flour, baking soda, baking powder and salt and blend into creamed
mixture. Stir in the oat-chocolate mixture, remaining chocolate chunks,
white chocolate chips and nuts. Drop by tablespoonfuls onto greased baking
sheets. Bake for 12 minutes. Cool for 3 minutes then remove from cookie
sheets. Yield about 5 dozen.
