Chocolate or Peanut Butter No Bake Cookies
I love to cook, but at times I just do not have the time. Here are two of
the most requested cookies I'm asked to make. Everyone loves these cookies.
They are fairly simple to make, but the taste is out of this world. These
are the cookies everyone requests if it isn't holiday baking season. My
favorite is the peanut butter without chocolate.
Ingredients:
2 c. sugar
1 stick butter or margarine
1 c. milk
1/4 c. unsweetened cocoa
1 c. peanut butter
1 tsp. vanilla
2 1/2 to 3 c. instant oats
Directions:
Place sugar, butter, milk and cocoa in a large pan. Heat on medium to a
rolling boil for 1 minute. The mixture will feel a little thicker as it
boils. Take off heat and immediately add peanut butter until melted. Add
vanilla and mix in. Add 2 to 2 1/2 c. of instant oats until mixed (I
usually only add the 2 1/2 c.). If mixture is still too runny, add the 1/2
c. Drop by tablespoons on wax paper until cool to touch.
Variation: Peanut Butter No Bake Cookies
Follow the above instructions except omit the cocoa in the boiling stage.
Add 1/2 c. or more of extra peanut butter to the mixture. Then add vanilla
and rolled oats as above. I hope you enjoy the cookies.
