    Date Pinwheels

    THE DOUGH:

    1/4 cup soft butter

1/4 cup firmly packed light brown sugar

    1/2 cup granulated sugar

    1/2 teaspoon vanilla

    1 egg, lightly beaten

    2 cups flour

    1/4 teaspoon baking soda

Cream butter, add the sugars, beat until light and fluffy, add egg and mix well.

Add sifted dry ingredients, mix well.

Chill until firm enough to roll. Several hours or overnight

Halve dough; roll each half into a 12x9 inch rectangle.

Spread with the filling; roll up tightly from end.

Wrap in plastic wrap, chill overnight, or freeze for easier slicing.

    Preheat oven to 375 F

Slice 1/8 inch thick, with a thin very sharp knife.

Bake on lightly greased cookie sheet, in moderate oven, about 10 minutes.

    FILLING:

1 7 ounce package pitted dates, cut into small pieces

    1/4 cup sugar

    1/3 cup water

    1 cup nuts, finely chopped

In a small saucepan, put water, dates, and sugar.

Simmer for 5 minutes stirring often.

    Add 1 cup chopped nuts.

Cool, before spreading on rolled dough.
