Glazed Apple Bars
1 C flour
1/2 C granulated sugar
1/4 tsp salt
1 T lemon zest
2/3 C shortening
1 egg, slightly beaten
4 tart apples, peeled, cored, and sliced
3/4 C granulated sugar
1 tsp cinnamon
1 T milk
Vanilla Glaze
2 C powdered sugar
1 T plus 2 tsp milk
1/2 tsp vanilla
Combine flour, 1/2 cup sugar, salt, and lemon peel. Cut in shortening until mixture is like meal. Pat half of the crumb mixture, about 1 1/2 cups, into a buttered 9-inch square baking pan. Cover with the apple slices, 3/4 cup granulated sugar, and sprinkle with cinnamon.
Stir the milk into remaining crumb mixture and spoon or sprinkle over apples. Bake at 375° for 45 minutes, until apples are tender. Frost with glaze while warm.
