Lemon Refrigerator Cookies
1 cup butter
1/2 cup sugar
1/2 cup firmly packed light brown sugar
3 tablespoons lemon juice
1 egg
4 cups flour
1/4 teaspoon baking soda
1 tablespoon grated lemon rind.
1/2 cup nuts, finely chopped
Beat butter and sugars until light and fluffy.
Add lemon juice, lemon rind and egg, mix well
Sift flour and soda together, add to sugar mixture. Mix well
Mix in nuts.
On plastic wrap, shape dough into two or three rolls.
Chill overnight.
Preheat oven to 400 F
With a thin sharp knife, cut into 1/4 in slices.,
Place on cookie sheets, 2 inches apart.
Bake for 9 minutes.
Yield, 7 dozen
