Oatmeal Peanut Butter Cookies
This cookie is a favorite of everyone who tries it; a great change of pace
to the standard peanut butter cookie!
Ingredients:
1/2 c. shortening
1/2 c. margarine, softened
1 c. packed brown sugar
3/4 c. white sugar
1 c. peanut butter
2 eggs
1 1/2 c. all-purpose flour
2 tsp. baking soda
1 tsp. salt
1 c. quick-cooking oats
Directions:
Preheat oven to 350 degrees. In a large bowl, cream together the shortening,
margarine, brown sugar, white sugar and peanut butter until smooth. Beat in
the eggs one at a time until well blended. Combine the flour, baking soda
and salt; stir into the creamed mixture. Mix in the oats until just
combined. Drop by teaspoonfuls onto ungreased cookie sheets. Bake for 10 to
15 minutes or until just light brown. Don't over bake. Cool and store in an
airtight container. Yields 48 servings.
