The special speculaas spice mix is made like this:
I used a recipe I found on the internet, I tested it and it was pretty close.
Grind up the following spices in the following ratios:
cinnamon 3
cloves 2
nutmeg 2
ginger 1/2
aniseed 1/2
coriander 1/2
cardamom 1/2
The dough:
100 grams of sugar (I always use the soft, light brown one)
100 grams of butter
a pinch of salt
aprox. 3 tablespoons of water
200 grams of flour
1 teaspoon of baking powder
aprox. 10 grams of speculaas spicemix (more or less to taste)
50 grams of almond (in slices, flakes)
grated rind of half a lemon
Put everything, except the almonds in a bowl, knead well till you get a firm dough. Then add the almonds and knead some more.
You can let it rest in the fridge overnight, but it will also come out good if you don't.
Shape and cut like Jackie said above.
Bake in a preheated oven on 320F for 25-30 minutes.
