Cranberry Salad

Cranberry Salad
1- bag fresh cranberries
1-12 oz. carton Cool Whip
1-20 oz. can crushed pineapple
handful miniature marshmallows
sugar to taste, about 3/4 cup
Grind cranberries, can use a food processor, add sugar and can of pineapple. Refrigerate overnight. Before serving add Cool Whip and marshmallows and fold until combined.

CRANBERRY ORANGE SALAD

A classic salad or relish - especially good with roast
turkey and chicken.
1 pkg. (3 oz.) Jello orange, lemon, or strawberry gelatin
1 c. boiling water
1/2 c. cold water
1 sm. orange
2 c. fresh cranberries
3 tbsp. sugar
Dissolve Jello in boiling water. Add cold water. Chill until
very thick. Cut orange in wedges and remove seeds. Put
orange and cranberries through food chopper. Mix fruit and
sugar. Fold into gelatin. Pour into individual molds or a 1
quart mold. Chill until firm. Unmold on crisp lettuce. Makes
about 3 1/2 cups, or 6 side salads or 10 relish servings.

CRANBERRY - ORANGE SALAD

A festive salad... but don't wait for the holidays. You can
make it any time with cranberries from the freezer. 1 1/2
c. raw cranberries 1 tbsp. sugar, optional 1 pkg. (4
serving) sugar free Jello brand gelatin, strawberry or
orange flavor 3/4 c. boiling water 1/2 c. cold water Ice
cubes
Quarter the orange and remove any seeds and half of the
rind. Combine remaining orange and rind and the cranberries
in food processor or food grinder and chop finely. Add sugar
and set aside.
Dissolve gelatin in boiling water. Combine cold water and
ice cubes to make 1 1/4 cups. Add to gelatin and stir until
slightly thickened; remove any unmelted ice.
Add fruit mixture. Pour into 8 inch square pan or bowl and
chill until set, about 2 hours. Cut into cubes or spoon
onto salad greens. Makes 6 servings -35 calories per
serving (without the sugar).
