"Cucumbers - One of the Very Best of the
'Burns-More-Calories-Than-It-Adds' Veggies"
My, oh my that humble little cucumber has a lot of
fans like me.
We are sharing today some of the tips and recipes
for using cucumbers that we have received from our
readers over the years. A big Thank You to all
who wrote.
Hank said, "Here's one for you: Put a seeded,
peeled cucumber, in chunks, in a blender.
Add some garlic, oregano, basil, salt and balsamic
vinegar to taste. Blend it until smooth. Use it as
a salad dressing. A totally calorie free food and
totally delicious."
Annette writes, "My mother used to serve them
separately with thin slices of red onion and a
little vinegar of choice. Mm mm very tasty. Try
it!"
Amy tells us, "I love to slice cucumbers and sweet
onions and then pour seasoned rice wine vinegar
over them.... chill.... and chow! What a great
snack!"
Joy says, "Here's the way that I truly enjoy
cucumbers. Combine vinegar and water to taste, I
like vinegar so that is always the predominant
taste in mine. Add salt, pepper and sliced onion
to taste. Add sliced and peeled cucumbers and
allow to marinate over night. Then enjoy them. My
husband and I love them this way."
From Kim, "Another good thing about cucumbers: It
takes more calories to digest them than they have.
So the more you eat, the more you lose. I like to
put them in a jar with leftover pepper juice along
with vinegar and spices. They don't get hot but
they get a nice, spicy kick."

salad of sliced cucumbers, red onion, cherry
tomatoes with a little red wine vinegar and
